Ingredients
  • ⅓ cup brown sugar
  • ¼ cup granulated sugar
  • 2 tablespoons of milk
  • 1 teaspoon pure vanilla extract
  • ¼ teaspoon salt
  • 1 cup all-purpose flour
  • ¾ cup mini chocolate chips
  • 1 stick of unsalted butter, softened
  • 1 quart of cookie dough ice cream, softened
Instructions
  1. mix brown sugar, granulated sugar, milk, vanilla, salt, butter & chocolate chips in mixing bowl or with electronic mixer until completely mixed
  2. spray 8x8 baking pan with cooking spray
  3. place half of the mixed cookie dough into the baking pan & flatten until the pan is fully covered with an even layer of dough
  4. spread desired amount of cookie dough ice cream evenly over the flattened cookie dough
  5. smooth ice cream out evenly using the bottom of a large spoon
  6. line the second 8x8 baking pan with parchment paper & spray with cooking spray leaving the excess parchment paper over the sides
  7. place the other half of the cookie dough in the second tray and flatten until the pan is fully covered with an even layer of dough
  8. lift up the excess parchment paper up and flip over top of the ice cream in the first 8x8 pan
  9. gently press your hands down upon the top layer of cookie dough
  10. cover pan with parchment paper & freeze for 3-4 hours or until firm
  11. cut frozen ice cream cookie dough into desirable size sandwiches
  12. enjoy!
