Ingredients
- For The Cupcakes:
- ¼ cup unsweetened cocoa powder
- 1/2 cup melted milk chocolate chips
- 3/4 cup all purpose flour
- 1 teaspoon baking powder
- 2 large eggs
- ½ cup granulated sugar
- ½ cup buttermilk
- ½ cup light brown sugar
- ⅓ cup vegetable oil
- 2 tablespoons vanilla extract
- For the frosting:
- 2 sticks melted butter
- 1 tablespoon heavy whipping cream
- 1 teaspoon vanilla extract
- 2¾ cups powdered sugar
- ¾ cup semi-sweet chocolate chips, melted
- ¼ cup unsweeted cocoa powder
- Toppings:
- graham crackers
- chocolate bar
- mini marshmallows
Instructions
- For the cupcakes:
- Preheat oven to 350 degrees.
- Line muffin/cupcake tray with liners.
- Melt chocolate chips.
- In mixing bowl, mix together all ingredients until smooth consistency. Do not over mix.
- Pour batter into cupcake liners & bake for 18-20 minutes or until toothpick inserted in the center of a cupcake comes out clean.
- Begin the frosting!
- For the frosting:
- Melt butter & chocolate chips in separate microwavable bowls.
- Mix together all ingredients until fluffy.
- Scoop frosting into large ziploc bag.
- Cut triangle off the end of one bag & frost cupcakes through that hole.
- Top cupcakes with marshmallows, chocolate, & graham cracker.
