Known for taking a romantic, feminine piece & putting a modern, wearable edge on it all, Rebecca Taylor just seems to get us when it comes to fashion. Pastels & florals, two of our favorites, are engrained within Taylor’s brand & we thought we saw eye to eye on just that. After chatting with Taylor about all things food we realized we have much more in common than just her captivating designs. Fried chicken, baking 4 cakes in a night, & David Bowie as her dream dinner guest? Yup, Rebecca Taylor is our new best friend.

Rebecca Taylor's Pavlova Recipe

Taylor is known for baking Pavlova & her staff loves the leftovers that come their way, “I’ll make 3 or 4 in a night to see which comes out best”. A New Zealand dessert, where Taylor hails from, Pavlova is a dried meringue. “Baking meringue, it’s so white & goes well with the clothes” Taylor told us with a laugh. Aside from the aesthetic of baking, Taylor adores that baking “it’s all in the alchemy, the heat of the oven, the eggs room temperature”. A chemist & a designer? Rebecca Taylor, you’re something else.

Serves: 1 cake
Ingredients
  • for pavlova:
  • 3 egg whites
  • ⅓ cup super fine sugar
  • 1 tsp distilled white vinegar
  • 1 tbsp hot water
  • for toppings:
  • blueberries
  • graham crackers
  • whipped cream
Instructions
  1. Preheat oven to 465F. Line baking sheet with tin foil.
  2. In medium mixing bowl, beat egg whites on high until stiff peaks form. Slowly add in the sugar & continue beating until mixture is extremely stiff.
  3. Slowly add in the vinegar & then the water. Continue beating on high until mixture is no longer glossy & peaks are very stiff.
  4. Place mixture onto center of baking sheet. Using the back of a spoon, shape pavlova to desired form as it will not change much in the oven.
  5. Turn off oven & place baking sheet in oven. Let sit for 1 hour or until the pavlova is no longer sticky & is somewhat hard. Top with desired toppings, serve, & enjoy!

While she much prefers baking to cooking, with three kids at home, Taylor is constantly making chicken for dinners. “I love fried chicken & mashed potatoes” Taylor confessed, “I don’t eat red meat but I eat chicken all the time”. So much chicken to the point that her mother calls her house, “chicken which way; which way are you making chicken tonight, Rebecca?”. When she’s not cooking dinners, Indian food is her favorite indulgence, “Nothing hits the spot like Indian food, [it’s] ricey, saucey, spicey-that’s my jam!”. A self-proclaimed comfort foodie, Taylor admits she’s tried eating healthy & it’s just not for her. “I’m trying to do this kale thing, the proper foods but I’m a real comfort food person”. Just another reason we love you so, Rebecca.

Last but certainly not least, we chatted with Taylor about her dream dinner date. David Bowie, who she calls, “my man” is one person Taylor would have loved to grab dinner with. Both with Taylor ordering & Bowie’s presence, that’s one dinner we’d definitely crash.
