Healthy Vanilla Energy Cookie Dough Bites

We can’t even begin to tell you how long we’ve been searing for a flour alternative that actually tastes great while maintaining it’s consistency that obviously is so great for baking. That was until a recent trip to the grocery store. Mind you, we likely spend at least half of our week at the grocery store. So you’d think, with that being 84 hours for the past, say 2 years, that we’d somehow realize protein powder could do just what we were looking for! Honestly though, a lot of protein powders are marketed as super bulky products when in fact that’s not what they are at all! We’ll blame it on the packaging that scared us away however protein powders can be used for a variety of reasons. We were super happy to have stumbled across Bob’s Red Mill’s Nutritional Boosters that come in a variety of flavors such as Vanilla, Chai, & Chocolate. We probably have about 200 Bob’s Red Mill products in our kitchen (no exaggeration). It’s a reliable brand that you can always count on for quality ingredients & great tasting products.

After snagging a few bags of their planet-based protein Nutritional Boosters (thankfully our ambitious grab of multiple bags worked out quite well for this recipe) we got to work creating something that could be a better-for-you snack alternative that tasted incredible, took 5 minutes to make, & was packed with protein. An added bonus is that these unreal cookie dough bites are also egg-free & dairy-free in turn making them Vegan. Plus they’re a great source of probiotics & pre-biotic fiber. While we chose to use the Vanilla Protein Powder you can totally swap it out for any of their other flavors. They’re a great way to enjoy a snack & provide your body with the fuel it needs while you’re on-the-go. We love to enjoy these treats while jumping from meeting to meeting during the week & as a mid-hike snack on the weekends!

Serves: 8-10 bites
Ingredients
  • for the dough:
  • ½ cup packed brown sugar
  • 6-7 pitted dates
  • pinch of salt
  • 1 tsp pure vanilla extract juice
  • 2 tsp almond milk
  • ½ cup Bob’s Red Mill vanilla protein powder
  • optional:
  • carob chips
Instructions
  1. In blender combine all dough ingredients. Blend until dough forms. Roll dough into bite sized balls. Place in fridge until ready to eat. Enjoy!
