It’s no secret I love a good cookie dough recipe. Whether it’s store bought, a healthier alternative, or super simply homemade, I love it all. Same is true for pie however I always like mine topped with ice cream. That was until I decided to top my apple pie with apple pie cookie dough which turns out to be just about the greatest thing EVER. It’s definitely an indulgent treat but tastes completely out of this world. The warm insides of the pie mixed with the crispy crust all topped with melt-in-your-mouth cookie dough is truly somethin’ else. Since this cookie dough recipe is egg-free & raw, it’s super easy to get creative with it (you can taste as you go) & let’s be honest, what’s better than a simple, 1 step, deliciously tasty recipe? Not much, people, not much.
- for the dough:
- ½ cup packed brown sugar
- 4 tbsp butter, softened
- pinch of salt
- 1 tsp vanilla
- 1 tbsp milk
- ½ cup flour
- ½ + a pinch tsp cinnamon
- ½ tsp of freshly squeeze apple juice (you can put a small piece of apple in a garlic press & squeeze out the juice!)
- 1 graham cracker, crushed
- add-ins:
- freeze dried apple bites
- In large mixing bowl combine all dough ingredients with an electric mixer until smooth. You will know it’s done when it has formed a giant ball of dough. Gently fold in add-ins with a spatula. Serve & enjoy!
