Nutella Stuffed Pumpkin Cookies

Ingredients
  • 1½ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1½ sticks unsalted butter, melted
  • pinch of salt
  • ¾ cup pumpkin puree
  • 1 cup old-fashioned rolled oats
  • ¾ cup packed light brown sugar
  • ¼ cup granulated sugar
  • 2 tbsp egg white
  • 1 teaspoon vanilla extract
  • Nutella
  • craisins
  • white chocolate chips
Instructions
  1. Preheat oven to 350 F. Line baking sheet with parchment paper.
  2. In mixing bowl, combine flour, baking soda, salt, & oats. Stir until combined & add in the melted butter. Continue stirring.
  3. Add in pumpkin puree, sugars, egg white, & vanilla. Stir until combined.
  4. Scoop the batter into the cookie scooper. Place batter onto parchment paper & flatten with spatula. Place ¼ inch diameter of Nutella in the center of dough. Scoop batter into scooper again & place that batter on top of Nutella, flattening out with spatula until entire top of cookie is covered. Repeat until all dough has been used.
  5. Add white chocolate chips & craisins to top of each cookie. Bake for 12-15 minutes. Let cool completely & enjoy!
