The Kittchen Prosciutto Fig Grilled CheeseI love this post for so many reasons. The first is because this grilled cheese was one of the most incredible meals I have ever tried. I’m not kidding, people. It. Is. So. Freakin’. Good. Not to mention it’s simple which you know I love in a meal. The flavors work perfectly together & it was completely satisfying–something I rarely say about a meal! Plus, Kit has her own cookbook with tons of grilled cheese recipes so you know it’s going to be great!

She somehow manages to balance married life, The Kittchen–her drool-worthy blog, co-running the Windy City Blogger Collective–you can tell from my sidebar I’m a member of this organization & let me just tell you it’s beyond impressive all they put on & organize for Chicago bloggers, & up until recently, she was even balancing a corporate 9-5 with it all.

Ingredients
  • 4-6 figs, halved
  • 6-8 slices of prosciutto
  • ¼ cup finely grated parmesan cheese
  • 5 oz Gabietou Herve Mons cheese (or any cow & sheeps milk cheese combination), grated
  • 4 slices bread
  • 6 tbsp butter
Instructions
  1. Preheat oven to 350 F. On baking sheet, place figs & prosciutto. Bake for roughly 10 minutes or until figs are juicy & prosciutto crispy. Set aside.
  2. On cutting board place four slices of bread. Spread one tablespoon of butter on one side of each piece. Cover buttered side in parmesan cheese. Flip over & place Gabietou Herve Mons cheese, prosciutto, & figs on bread. Close sandwiches with parmesan covered pieces facing out.
  3. Place remaining butter in skillet over low-medium heat. Place sandwiches on skillet & let cook for roughly 3 minutes or until cheese has hardened & is golden brown. Flip & repeat.
  4. Serve & enjoy!
