As for Instagram, Rosie shared some of her secrets with us! Her favorite wall in Chicago? A comic book styled one in the West Loop, Chicago. Some others we love? This one in LA, these hearts in NY, & of course a good ole pink wall. In terms of finding these walls Rosie credits a lot of research both online & driving around in her spare time to explore the city. Rosie finds the walls are always changing so once you find one, make sure to snap that picture fast!

Serves: 4 patties
Ingredients
  • 4 cups cherry or grape tomatoes
  • 1 cup fresh goat cheese
  • 1 teaspoon chives, chopped
  • 1 teaspoon basil, chopped
  • 1 teaspoon oregano, chopped
  • 1 teaspoon thyme, chopped
  • 1 cup unseasoned bread crumbs or panko
  • ground black pepper
  • salt
  • 1 egg
  • olive oil
  • 1 tablespoon fresh lemon juice
  • honey, optional
  • spring onion garnish
Instructions
  1. Mix together goat cheese and herbs. Shape them into patties (four, two inch cakes). Chill for 30 minutes.
  2. Season the bread crumbs/panko with salt and pepper to taste. Beat the egg with a pinch of salt.*
  3. Dip the goat cheese cakes into the egg and then into the bread crumbs to coat.
  4. Place the cakes on buttered cookie sheet and bake until golden brown (8 minutes at 375 degrees, remember to preheat) or brown them in an oiled skillet over medium/high heat.
  5. Whisk oil with lemon juice and toss with halved tomatoes. Season with salt and pepper. Garnish with spring onion, serve, & enjoy!
  6. * For a touch of sweetness, add a teaspoon of honey to eggs before dipping coat cheese cakes.
