Inspired by our Cookie Dough Ice Cream Sandwich Recipe & warmer temperatures ahead, we decided it was time for a new ice cream sandwich recipe. After all, our summers are spent with at least one ice cream cone a day & since it’s not quite that warm out yet, a warm brownie seemed like the perfect middleman for this job. Two full brownies as the “buns” & smooth ice cream in the center? We have a feeling this recipe is one we’ll be making a lot this summer.

Using the brownie recipe from our Brownie Cookie Dough Layered Cake, we made double the brownies & used full sized ones as the base & top of the ice cream sandwiches.

Ingredients
  • for the brownie (you'll want to make this recipe twice or double ingredients & baking simultaneously in two separate baking dishes for full size ice cream sandwiches):
  • 1 cup flour
  • 4 tbsp (half stick) butter, melted
  • 2 large tbsp cocoa powder
  • 3 cups chocolate chips (your flavor choice!), melted
  • 1 tsp baking powder
  • 4 tbsp milk
  • 1 tbsp vanilla extract
  • ½ cup brown sugar
  • 1½ cup granulated sugar
  • 3 eggs
  • for the filling:
  • 1.5 quart ice cream
Instructions
  1. Preheat oven to 350 F.
  2. In separate small bowls, melt both butter & chocolate chips.
  3. In large mixing bowl, pour in all ingredients & mix until combined.
  4. Pour batter into parchment paper lined 9x9 baking tray.
  5. Bake for 25-35 minutes, or until toothpick is inserted and comes out clean.
  6. Let cool completely. Repeat entire process. Set aside & let both cool completely.
  7. Leave one brownie in pan & scoop ice cream on top of it. Smooth ice cream with spatula.
  8. Lift parchment paper of other brownie out of baking dish. Place solid brownie from tray on top of ice cream. Gently press down.
  9. Freeze brownie ice cream sandwiches for 4-6 hours. Slice, serve & enjoy!

    Looks amazing, tried to make this last night, though the ice cream seems have all melted out between the layers. Thought had left it long enough for cooling, felt cool to me, but i’m thinking obviously not quite long enough???
    do you think can try to pry it apart between the layers again and top up the ice cream layer in between?
    also – do you think a layer of silky runny ganache would work over the top of it?
    eeekk – was hoping to serve this as my daughter’s bday cake at the family dinner on the weekend – not in current state it’s in.
    on the plus side – the edge we sampled tasted amazing though

      Hi Debbie! So glad to hear you recreated our recipe & loved the taste 🙂 As for the ice cream sliding out–oh no! Was the ice cream too soft/melted? Were the brownies soft? We definitely want to find you a solution to this so here are some suggestions! 1. Either pry apart the brownies layers or cut open the two layers horizontally. Once you’re back with the two original layers possibly try again. 2. Cut the top layer down a bit. By thinning out the top layer the pressure on the ice cream will be reduced & will hopefully remain in place. 3. Serve brownie chunks with scoops of ice cream on top. You could even do a DIY brownie bar with different sprinkles & ice cream flavors for guests to top their brownies with! 4. Top the brownies as is with a layer of ice cream. With no pressure on top hopefully the ice cream will stay in place! Hope some of those help! Just make sure the bars are completely frozen right before & after you pour it on as that will easily melt the ice cream. Good luck! xo
