We know, we know it’s been a while since we’ve done an Eating Healthy On A Budget post. Maybe that’s because lately we’ve been indulging in cookies, pizza, & donuts. Oops! Here to make it up to you is our incredible Zucchini Noodle recipe with Avocado Pesto. Made with just 7 ingredients this recipe is the perfect summertime meal that is both healthy & affordable. Not to mention it’s incredibly delicious!
Eating Healthy On A Budget: Avocado Pesto Zucchini Noodles

Ingredients
- 1 cup basil
- 1 cup baby arugula
- 1 avocado
- ½ cup pinenuts
- 1 tsp garlic powder
- 3 tbsp olive oil
- 4 oz zucchini noodles
Instructions
- In food processor, blend basil, arugula, & avocado until smooth. Add in pinenuts & pulse 5 times.
- In large skillet, heat olive oil with garlic powder over medium heat. Add in zucchini noodles & pesto sauce. Let sit for 4 minutes, stir, & let sit another 4 minutes. Serve & enjoy!
