While cupcake shops are a dime a dozen now-a-days, it’s rare to find a shop dedicated to just cookies. Yet when Isabel Carpenter ventured out to open By The Park, that was the exact intention she had in mind. Leaving her day job in finance was a leap Carpenter knew she had to take in order to bring her cookie shop dream to life. Boy are we glad she did. Aside from the cookies themselves, which we’ll get to in a bit, By The Park is impeccably decorated to make you feel beyond comfortable while enjoying your treats. A kids play area, park benches, & floral walls are just some of the areas picking up on the park theme throughout the shop. All the cookies are named for parks around the world: Griffith Park, Millennium Park, Zilker Park, Yosemite Park, & of course, the park the shop is named for, Lincoln Park.

We’ll just get straight to the point here & let you know about our favorite cookies at By The Park. Our absolute favorite, which took us by surprise, was the Biscayne Park cookie. Lime, white chocolate chips, & graham crackers all make up this delicious treat that tastes like a mixture of Key Lime Pie with the softness of a Lemon Bar.

Other favorites included the Yosemite Park cookie (house-made granola, cranberry, & white chocolate chips), the National Mall Bar (white chocolate truffle, Oreo topping, & Oreo crust), & the Zilker Park cookie (white chocolate chips & rainbow sprinkles). The flavors at By The Park are anything but typical & we couldn’t love that more. Isabel shared her secret for attaining the perfect cookie: coconut oil, which definitely made us feel better about indulging in 6+ cookies in one sitting…
