We’re not really sure how we did it, in one try none-the-less, but we’ve very proud of this recipe & are so excited to share it with you all! It’s the most perfect double chocolate banana muffin recipe that is SO much better for you than your typical muffin recipe. We ate two in one sitting (yes, they’re that good & didn’t feel that much guilt…) A normal muffin recipe tends to have at least 1/2 cup of added granulated sugar but this one only calls for 1 tbsp of coconut sugar. While regular granulated sugar doesn’t contain any nutritional value & is often considered empty calories, coconut sugar is much better for you & actually contains essential nutrients. Anyway, let’s get to the good stuff here…the taste!
These muffins are so moist they don’t even crumble. Ya know when you eat a cupcake & crumbs get everywhere? That’s typically because it’s a bit too dry… These babies stick together like glue & have a rich chocolatey banana flavor. The carob chips mimic the taste of regular chocolate chips but without the dairy. If you sprinkle some on top of & within your muffins they get super gooey. If they’re on top of the muffins but touching the side of the tray, they tend to get a bit caramelized which surprisingly tasted really good. This 1 step muffin recipe is seriously magical. It takes less than 30 minutes to make (from start to finish!), is dairy-free (aka guilt free), & tastes so. freakin’. good.

- 3 bananas, mashed
- ¼ cup maple syrup
- 1 tsp pure vanilla extract
- ¼ cup egg whites
- 2 tbsp coconut oil
- ½ cup no sugar added applesauce
- ¾ cup oat flour
- ¼ cup old fashioned oats
- ½ cup unsweetened cocoa powder
- 1 tsp baking soda
- pinch of salt
- ½ cup carob chips
- 1 tbsp coconut sugar
- Preheat oven to 350 F. Combine all ingredients in a large bowl mixing bowl & stir together with a whisk. Spray muffin tray with baking spray & scoop in batter using an ice cream scoop. Bake for 20-22 minutes. Serve & enjoy!
