Caramel Pop Tart Ice Cream Sandwich

Maybe it’s the warmer weather but we’ve been on a serious ice cream kick lately. The problem is, we feel just a teeny bit guilty when eating it directly from the pint… Resolution? Creating a delicious recipe with the ice cream so it makes us feel as though we earned that treat. Even if that treat was created in just 1 step & 5 minutes, which is exactly the case with this pop-tart ice cream sandwich recipe. It seriously could not be easier to make & tastes out of this world good. Feel free to use store bought pop-tarts or create them on your own for some added magic. For this particular recipe we used store bought pop-tarts that were caramel flavored & used Little G Cowboy Cookie for the ice cream which is a mix of coconut, cookie dough, peanut butter, & so much more. We highly suggest this combination but a few others that would be great are strawberry pop-tarts with vanilla bean ice cream, cookie dough pop-tarts with cookie dough ice cream, & mint pop-tarts with mint chocolate chip ice cream. Ingredients
  • 6 pop-tarts
  • 1 pint ice cream
Instructions
  1. Line casserole dish with parchment paper so that there is excess over the sides. Place 3 pop-tarts top down, side by side in the dish. Scoop ice cream onto pop-tarts & top with three right on top so that they are directly in line with the bottom ones (top side up). Using the excess parchment paper on the sides gently press down on tops so the ice cream flattens & then smooth out the sides with a butter knife. Place in freezer for 4-6 hours. Gently separate sandwiches from one another. Serve & enjoy!
