You know those recipes that come about purely based on what’s leftover in the fridge? Ya, well this is definitely one of them. Sometimes those end up legitimately repulsive & others, like this one, are clear winners. We’re obsessed with these Cobb Salad Tacos that if you think about it, make total sense. Tacos are typically filled with some sort of meat & then topped with cheese, tomatoes, lettuce, etc. which is exactly what this Cobb Salad Taco does. Essentially it’s a lighter version of a taco as it uses white meat instead of red meat & has no sauce. Don’t be fooled though, it’s still packed with flavor & is totally delicious.
- tortillas
- lettuce
- chicken, grilled
- tomatoes, chopped
- hard boiled eggs, chopped
- avocado, chopped
- blue cheese
- optional:
- bacon, chopped
- onion, chopped
- Toss all ingredients (desired amounts of each) onto a taco shell. Serve & enjoy!
