Recently on Instagram stories we asked what you guys wanted to see more of. The results were pretty comical as it was a tie between “cute desserts” & “easy, healthy meals”. We gave you our Unicorn Oatmeal & Mini Rosé Pop-Tarts to help fuel those sweets addictions & now we’re comin’ atcha with one of our favorite meals that is easy, healthier, & beyond delicious. This Mango Coconut Lime Rice requires just 4 ingredients, 1 pot, & 5 minutes of your time. Yup, dinner for 4-6 people in just fiiive whole minutes!
- 24 oz white Jasmine rice
- 1 can organic light coconut milk
- 1 lime, juiced
- 1 mango, diced
- Cook rice according to packaging instructions. Once fully cooked, combine in large skillet with coconut milk. Let simmer for 5 minutes or until most of the milk is absorbed. Add in the lime juice & stir to combine. Toss in the mango, serve, & enjoy!
