Settling into a new city is a whirlwind of emotions. It’s so exciting meeting new people, trying out new restaurants, & exploring new neighborhoods. However all that excitement leaves me with quite a bit of exhaustion so after a long day when I’m headed home the last thing I’ve been wanting to do is cook up an elaborate meal. Kind of odd for me since I love spending time in the kitchen but I have a feeling once I get into more of a routine that’ll come back no problem. This turkey lettuce wrap recipe has been one of my go-to’s for a quick, healthy, & delicious meal. It’s the perfect one-pot, one-step dinner recipe that serves as lunch and dinner the next day too!
- for the glaze:
- 2 tsp gochujang
- 2 tsp mirin
- 2 tsp soy sauce
- 1½ tsp coconut sugar
- ½ tsp coconut oil
- ½ tsp minced garlic
- for the turkey:
- 1 lb ground lean turkey
- for the toppings:
- sesame seeds
- lettuce
- In medium mixing bowl, stir to combine all sauce ingredients. Toss turkey into large skillet over medium-high heat & cook until completely white. Turn off heat & toss in sauce to coat turkey. Throw turkey over lettuce & top with sesame seeds. Enjoy!
