Confession: the can of pumpkin puree was already opened, all the ingredients were still sprawled across the counter, & I couldn’t bare the thought of waiting a few hours for my pumpkin spiced chia seed pudding to be ready. SO I thought about what I could make that I could immediately eat after & of course, cookie dough popped right into my head which is where the idea for this recipe came about. Cookie dough anything is basically my favorite: lemon blueberry, apple pie, the list can go on & on. While I’m confessing, the other morning I ate a pint, yes pint, of cookie dough from my favorite brand for breakfast. It was 7:30am & I was scraping the bottom. Someone plz help me. Whatever, I’m currently eating a boring AF kale salad so ya win some, ya lose some, right? Back to this cookie dough, it’s pumpkin spiced latte flavor with the latte being optional for those who aren’t coffee lovers. If you want it to taste like the real (Starbucks) deal, add a bit of espresso. If you’re not a coffee fan, like me (surprise, surprise!), just skip it! Either way this is one recipe you must make this fall. Trust me, you won’t regret it.
- for the dough:
- ½ cup packed brown sugar
- 2 tbsp butter, softened
- pinch of salt
- ½ tsp pure vanilla extract
- 1 tbsp pumpkin puree
- ¼ tsp pumpkin pie spice
- ½ cup flour
- 1 tbsp milk
- optional: ½ tsp hot espresso
- In large mixing bowl combine all dough ingredients with an electric mixer until smooth. You will know it’s done when it has formed a giant ball of dough. Serve & enjoy!
