As we gear up for the holiday season one of the most commonly asked questions I get is how you can stay healthy while enjoying all the goodness the holidays have to offer. From work parties to holiday dinners, family gatherings & so much more, I’m the first to admit I often succumb to all the sweets & treats surrounding me this time of year. While I’m all for splurging, it’s definitely not an everyday thing, despite it’s offerings around the holidays! That’s why I wanted to create a simple dish that tasted incredible, was both sweet AND savory (hit those cravings head on!), took only a few minutes to make, could easily be brought to a dinner party, was healthy yet still cost-effective, & was made with at least majority of the ingredients that are fridge/pantry staples. Woosh! A lot of checkmarks, I know! Luckily this simple tomato salad recipe checks alllll the boxes & more. Made with NatureSweet SunBursts® tomatoes (that I always have in the fridge because they seriously taste homegrown–not kidding the first time I served them in a salad my friends asked if I had gardened them–flattered I wanted to say yes but instead told ’em the truth!) as the base this salad is topped with basic, cucumber, a balsamic glaze, & a sprinkle of feta cheese. - 1 package NatureSweet SunBursts, halved
- ¼ cup feta cheese
- 2 teaspoons balsamic vinegar
- 2 large basil leaves, chopped
- 1 mini cucumber, sliced thin
- In large mixing bowl, combine the tomatos, feta, basil, & cucumber. Toss until mixed. Plate & drizzle with balsamic. Serve & enjoy!
