The conversation of whether the blogging world has become oversaturated is one we hear on the daily. What used to be simply a space to inspire others has become a billion dollar industry which you can view in various lights. While we personally are big fans of the booming business (gotta keep the lights on somehow!) we all always need a reminder that not everything needs to be taken so seriously. Enter: Average Fashion Blogger.

What started as a joke making fun of a friend who is a fashion blogger, Courtney aka Corny aka Average Fashion Blogger pokes fun at the tendencies & habits “influencers” have on social media (think IG stories starting with “HI GUYS!!!!!” or doing hair tutorials only to burn off a chunk of her hair) while ironically becoming one of the biggest influencers in the space herself.

We spent a day in Courtney’s kitchen where she made us banana pancakes that honestly ended up looking gourmet. Her recipe is so. freaking. easy. to make & her technique to make them is rather interesting. But here’s the best part. Courtney actually has really good cooking tips that you would legit never think of. Think mixing pancake batter in a stock pot instead of a standard mixing bowl so you have a handle to hold onto when pouring it onto the skillet. GENIUS. Average Fashion Blogger's Banana Pancakes

Recipe type: Breakfast
Ingredients
  • 2 cups dry mixture
  • 1½ cups water
  • 2 bananas, sliced
Instructions
  1. Combine water & dry mixture in medium mixing bowl. Stir to combine.
  2. Heat skillet over medium heat & spray with baking spray.
  3. Pour desired amount of batter into skillet in the shape of a circle. Immediately top with sliced bananas. Let cook 3-5 minutes or until bubble begin to form on the top of the pancake. Flip & cook another 2 minutes or until pancake is cooked through & both sides are a golden brown.
  4. Serve & enjoy!
