This grilled romaine salad with corn, avocado & a delicious homemade ginger miso dressing is the perfect summertime salad. It’s such an easy way to switch up your regular salad just by grilling the lettuce which takes all of 5 minutes. The miso ginger dressing is made with lemon, olive oil, water, honey, garlic & a Bou Miso Ginger Broth Cube for the ultimate sweet summertime taste. We used one of these cubes in our ramen recipe a few weeks back & just couldn’t get enough of the taste so we decided to see how else we could use it & voila! This recipe was born. This recipe is entirely gluten-free & made with no artificial flavors which is just one more reason you need to make it immediately!

- For The Dressing:
- ½ lemon juiced
- 1 tbsp honey
- 2 tbsp EVOO
- 2 tbsp water
- 2 garlic cloves, minced
- 1 Bou Miso Broth Cube, Ginger
- For The Salad:
- ½ cup corn
- 1 head romaine lettuce
- ½ avocado
- In small (microwave safe) mixing bowl, combine all dressing ingredients. Whisk to combine & place in microwave for 30 seconds. Remove, whisk to combine again & let sit for 5-10 minutes or until cooled.
- While dressing is cooling, head grill pan over medium-high heat. Slice romaine in half & place back side onto grill pan for 3-5 minutes, or until brown lines form on lettuce. Flip & repeat on the other side.
- Plate the romaine. Toss corn with the dressing & drizzle onto romaine. Add cubed avocado, serve & enjoy!
