Asian Cucumber Salad Recipe

This recipe kind of came about from wanting to use up what was left of the vegan cream cheese, some toast in the freezer & veggies that needed to be consumer within the next day or two but WOW is it one of my new favorite meals. I’ve made this cucumber salad now a ton & enjoy it both on it’s own as well as on the toast with vegan cream cheese. It’s beyond simple to make & is really healthy. Not to mention it is so freaking delicious!

Serves: 1-2 servings
Ingredients
  • 3 radishes, washed & chopped
  • 1 cucumber, chopped
  • 1 piece of celery, chopped
  • 2 tbsp. chopped scallion
  • 1 tsp coconut aminos
  • 1 tsp honey
  • pinch of garlic powder
  • toast (I prefer ezekiel bread)
  • vegan chive cream cheese
Instructions
  1. Wash & chop all veggies. Toss them with coconut aminos, honey & garlic powder. Serve on it's own or with toast covered in vegan cream cheese.
