I’ve tried probably 50 vegan mac & cheese recipes but I could never find one that actually satisfied my craving for mac & cheese until this one. It is beyond delicious & super easy to make. Not to mention, it’s actually really healthy for you. This recipe is filled with nutrients such as protein from the nutritional yeast, heart-healthy fatty acids from the cashews, fiber from the sweet potato & so much more. I’m so excited to be sharing this recipe with y’all as it’s one of my absolute favorites!

Ingredients
- ½ cup roasted sweet potato
- ½ cup raw cashews
- ½ cup water
- ¼ lemon, juiced
- 2 tbsp EVOO
- 3 tbsp nutritional yeast
- ¼ tsp garlic powder
- pinch of salt
- 1 box pasta (I used gluten-free shells)
Instructions
- In blender or food processor, combine sweet potato, cashews, water, lemon juice, EVOO, nutritional yeast, garlic powder & salt. Blend until smooth. Pour sauce over pasta, serve & enjoy!
