Ingredients
  • 1 cup brown rice, cooked
  • ¼ cup greek yogurt
  • 2 tbsp sriracha
  • 1 cup cherry tomatoes, halved
  • ¼ cup red wine vinegar
  • ¼ cup EVOO
  • 1 avocado, diced
  • ¼ cup shaved parmesan cheese
  • 4 cups arugula
  • 4 servings chicken breasts, cooked & shredded
  • salt
  • pepper
Instructions
  1. Soak halved tomatoes in red wine vinegar & EVOO for 30 minutes.
  2. In small mixing bowl, mix together yogurt & sriracha. Mix in the cooked brown rice.
  3. Strain cherry tomatoes.
  4. Place portioned rice at the bottom of serving bowls. Top with arugula, tomatoes, avocado, chicken, & parmesan. Season with a pinch of salt & pepper if desired. Enjoy!
