Soak halved tomatoes in red wine vinegar & EVOO for 30 minutes.
In small mixing bowl, mix together yogurt & sriracha. Mix in the cooked brown rice.
Strain cherry tomatoes.
Place portioned rice at the bottom of serving bowls. Top with arugula, tomatoes, avocado, chicken, & parmesan. Season with a pinch of salt & pepper if desired. Enjoy!
