Preheat oven to 350 F. Line a 9x5 loaf pan with parchment paper.
In large mixing bowl, smash your bananas. Add the EVOO, maple syrup, greek yogurt, eggs, & vanilla extract. Stir to combine. Add in the AP flour, whole wheat flour, baking soda, & sea salt. Pour batter into baking dish & cook for roughly 60 minutes or until toothpick is inserted & comes out clean.
Cool on wire rack, serve, & enjoy!
