Stone Cold Fox Grape Crostini

Ingredients
  • 1½ lb. seedless red or blue/black grapes
  • 1 anaheim chile
  • 1 tbsp. red wine vinegar
  • 1 bunch fresh cilantro, finely chopped
  • ½ small red onion, finely chopped
  • salt & pepper
  • 1 whole grain or sesame baguette
  • 8 ox chèvre, room temperature
  • 2 tbsp milk
Instructions
  1. Preheat the oven to 375F.
  2. Cut anaheim chile into fourths & remove the seeds. Dice as small as possible. Dice red onion as tiny as possible & combine onion & chile in medium mixing bowl.
  3. Dice grapes & add to mixing bowl. Add vinegar, ½ cup cilantro, a pinch fo salt & pepper. Toss to combine.
  4. Slice the baguette into ¼ inch slices & arrange on baking tray. Bake on the upper rack for 4 minutes, remove tray from oven, flip slices over, & bake another 4 minutes. Let cool.
  5. In small mixing bowl, combine goat cheese & milk. Stir to combine. Spread mixture onto baguette slices & place a heaping spoonful of the grape salsa on top. Garnish with fresh cilantro. Serve & enjoy!
