Kat Tanita's Gluten-Free Pumpkin Bread

Ingredients
  • 2 cups oat floar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinammon
  • ½ tsp ginger
  • ½ tsp nutmeg
  • ½ tsp sea salt
  • 1 can organic pumpkin puree
  • 2 large eggs
  • 1 tsp vanilla
  • ¼ cup honey
  • ⅓ cup maple syrup
  • ⅓ cup olive oil
  • ½ to 1 cup chocolate chips
Instructions
  1. Preheat oven to 350 F. Spray 9x5 loaf pan with baking spray.
  2. In a small bowl mix dry ingredients. In a larger mixing bowl, mix wet ingredients.
  3. Add in ⅓ portion of the dry mixture into the larger bowl & stir. Repeat until all dry ingredients have been added & then add chocolate chips.
  4. Bake for 45-50 minutes or until toothpick is inserted & comes out clean. Let cool for 15 minutes, serve, & enjoy!
