Jeni's Ice Cream Ring Cake Recipe

Ingredients
  • for the ring cake:
  • 1 cup lukewarm water
  • 4 tbsp (1/2 stick) unsalted butter, cut into ½ tbsp pieces
  • 1 cup unbleached all-purpose flour (or GF flour)
  • 4 large eggs, room temperature
  • for the chocolate glaze:
  • 6 tbsp (3/4 stick) unsalted butter
  • 3 oz unsweetened chocolate (99% cacao), chopped
  • 3 cups powdered sugar
  • 5-6 tbsp whole milk
  • for serving:
  • Jeni's Ice Cream flavor(s) of your choice
Instructions
  1. Preheat the oven to 400F. In medium saucepan, combine water & butter. Bring to a boil while stirring to melt the butter. Pour in all the flour & mix until a ball is formed. Remove from heat & beat in the eggs, one at a time, with an electric mixer.
  2. Line cookie sheet with parchment paper & drop even spoonfuls of dough onto sheet to make a 12 inch oval.
  3. Bake around 35-40 minutes, or until golden brown. Remove from oven & let cool for 10-15 minutes. Once cool, slice ring cake in half, length-wise.
  4. When almost ready to drizzle sauce (see below), fill ring cake with ice cream & put the top half back on.
  5. In small saucepan, over low heat, melt the butter & chocolate. Stir in the sugar. Slowly stir in 5 tbsp whole milk, & add 1 tbsp more if needed, until desired consistency.
  6. Remove from heat & drizzle immediately on top of stuffed ring cake.
  7. Serve & enjoy!
