Amanda Kloots' Healthy Pizza Recipe

Ingredients
  • cauliflower curst
  • ¼ cup basil pesto
  • 1 tsp extra-virgin olive oil (EVOO)
  • 1 jar sun-dried tomatoes
  • ½ cup spinach
  • ⅓ cup mozzarella cheese
Instructions
  1. Cook cauliflower crust according to instructions on package or recipe.
  2. In small skillet, combine EVOO & spinach. Sauté over medium heat until spinach has wilted (roughly 3 minutes).
  3. Spread basil pesto over the pizza similar to how you would with pizza sauce. Top with spinach, sun-dried tomatoes, & cheese. Bake or broil for 2 minutes, until toppings have melted into the pizza. Serve & enjoy!
