The Blonde Files Healthy Cookie Recipe

Ingredients
  • 2.5 cups almond flour
  • ½ cup coconut sugar
  • ½ tsp baking powder
  • ½ tsp baking soda
  • 1 tbsp chia seeds
  • 1 cup nut (or seed) butter
  • ½ cup maple syrup
  • 1 tbsp apple sauce
  • 1 tsp pure vanilla extract
  • 1 Hu Dark Chocolate Cashew Butter Bar
  • salt flakes, for topping
Instructions
  1. In large mixing bowl combine almond flour, coconut sugar, baking soda, baking powder, & chia seeds. Stir to combine.
  2. Stir in the nut butter, maple syrup, apple sauce & vanilla.
  3. Preheat oven to 350 F. Line baking sheet with parchment paper & plop scoops of cookie dough onto tray about 1-2 inches apart. Bake for 12 minutes or until browning on top. Remove from oven, add piece of Hu chocolate to each cookie & bake again for another 2-3 minutes. Immediately top with salt flakes, serve & enjoy!
