The Butcher's Daughter Coconut Ceviche Recipe

Ingredients
  • 2 cups young Thai coconut meat
  • 1 basket of cherry tomatoes, sliced
  • 1 jalapeno, diced
  • 1 small red onion, chopped
  • ½ bunch of cilantro, roughly chopped
  • 1 lime
  • salt
  • pepper
  • to serve:
  • tortilla chips
Instructions
  1. Cut coconut meat into medium size squares, (bite size), and toss in a large bowl. Zest & squeeze the juice of the lime on top of the coconut meat.
  2. Chop jalapeƱo (discard seeds), onion, tomato, & cilantro. Add ingredients to coconut meat bowl & toss to combine.
  3. Season with salt & pepper. Serve with tortilla chips & enjoy!
