The Butcher's Daughter Coconut Ceviche Recipe

- 2 cups young Thai coconut meat
- 1 basket of cherry tomatoes, sliced
- 1 jalapeno, diced
- 1 small red onion, chopped
- ½ bunch of cilantro, roughly chopped
- 1 lime
- salt
- pepper
- to serve:
- tortilla chips
- Cut coconut meat into medium size squares, (bite size), and toss in a large bowl. Zest & squeeze the juice of the lime on top of the coconut meat.
- Chop jalapeƱo (discard seeds), onion, tomato, & cilantro. Add ingredients to coconut meat bowl & toss to combine.
- Season with salt & pepper. Serve with tortilla chips & enjoy!
