Kendall Long's Secret Brussels Sprout Salad Recipe

Ingredients
  • 2 cups shaved brussels sprouts
  • 1 cup arugula
  • ¼ cup apple cider vinegar
  • juice of 1 lemon
  • pinch of pepper
  • pinch of salt
  • 2 tsp honey
  • 4-5 dates, chopped lengthwise
  • 3 tbsp shredded parmesan cheese
  • optional: pepita seeds broiled (watch closely) sprinkled with salt, pepper, paprika, & cumin
Instructions
  1. In large mixing bowl combine brussels sprouts & arugula.
  2. In small mixing bowl, stir together the apple cider vinegar, lemon juice, salt, pepper, & honey.
  3. Drizzle the dressing over the lettuce, add in chopped dates & parmesan cheese. Toss to combine. Serve & enjoy!
