Ali Fedotowsky's Cauliflower Rice Salad

Ingredients
  • 16oz cauliflower rice
  • 1 yellow onion
  • 1 tbsp vegan butter
  • handful of fresh mint
  • handful of fresh cilantro
  • handful of fresh parsley
  • handful of fresh spinach
  • 1 cup sliced almonds
  • 1 cup dried cranberries
  • 1 cup edamame
  • 1 lemon
Instructions
  1. Remove herbs from their stems. Chop the mint, cilantro, parsley & spinach finely. Toss all together.
  2. Chop the onion finely & saute in pot with vegan butter until onion is translucent over medium heat.
  3. Reduce heat to low & add in cauliflower rice. Cook for about 5 minutes, stirring often.
  4. Turn off the heat & add in the edamame, almonds, cranberries & drizzle the lemon on top.
  5. Serve & enjoy!
