Ali Fedotowsky's Cauliflower Rice Salad

Serves: 4 servings
- 16oz cauliflower rice
- 1 yellow onion
- 1 tbsp vegan butter
- handful of fresh mint
- handful of fresh cilantro
- handful of fresh parsley
- handful of fresh spinach
- 1 cup sliced almonds
- 1 cup dried cranberries
- 1 cup edamame
- 1 lemon
- Remove herbs from their stems. Chop the mint, cilantro, parsley & spinach finely. Toss all together.
- Chop the onion finely & saute in pot with vegan butter until onion is translucent over medium heat.
- Reduce heat to low & add in cauliflower rice. Cook for about 5 minutes, stirring often.
- Turn off the heat & add in the edamame, almonds, cranberries & drizzle the lemon on top.
- Serve & enjoy!
