Dairy-Free Bran Muffin Recipe

Ingredients
  • 1 cup almond milk
  • 1 cup all bran cereal
  • 1 cup all-purpose flour
  • pinch of salt
  • ⅓ cup light brown sugar
  • pinch of baking powder
  • pinch of ground cinnamon
  • pinch of nutmeg
  • ⅓ cup applesauce
  • ½ tsp vanilla extract
Instructions
  1. Preheat oven to 375F.
  2. Combine applesauce, vanilla & almond milk in large mixing bowl. Stir to combine.
  3. Stir in cereal & let sit for 5 minutes.
  4. Add in flour, salt, brown sugar, baking soda, cinnamon & nutmeg. Stir to combine.
  5. Line muffin tray or spray muffin tray with baking spray. Pour batter evenly into 9-12 muffin spaces. Bake for 20 minutes. Let cool, serve & enjoy!
