The Best Vegan Mac & Cheese Recipe

Ingredients
  • ½ cup roasted sweet potato
  • ½ cup raw cashews
  • ½ cup water
  • ¼ lemon, juiced
  • 2 tbsp EVOO
  • 3 tbsp nutritional yeast
  • ¼ tsp garlic powder
  • pinch of salt
  • 1 box pasta (I used gluten-free shells)
Instructions
  1. In blender or food processor, combine sweet potato, cashews, water, lemon juice, EVOO, nutritional yeast, garlic powder & salt. Blend until smooth. Pour sauce over pasta, serve & enjoy!
