Ingredients
  • for salad:
  • ¼ large watermelon
  • handful toasted marcona almonds
  • handful sunflower seeds
  • 4 oz feta cheese
  • 1 english cucumber
  • 1 red onion
  • 1 shallot
  • 1 bunch fresh mint
  • olive oil
  • salt, to taste
  • pepper, to taste
  • for pineapple dessert:
  • 1 pineapple
  • 1 jar dulce de leche
  • 1 pint vanilla ice cream
Instructions
  1. Slice red onion & drizzle with oil. Season with salt & pepper. Grill over medium heat for 3-5 minutes, flipping halfway through. While that is cooking, finely chop the shallot. Chop the onion into bite size pieces.
  2. Lightly toast the almonds & seeds for roughly 45 seconds. Proceed by finely chopping them together. Thinly slice the cucumber. Cut a small portion of the watermelon end off so it stands firmly on one end. Carefully shave off the rind leaving you with just red flesh.
  3. Cut watermelon into thin blocks. Toss together with the onion, shallot, almonds, seeds, & cucumber. Crumble feta over the salad & add in finely chopped mint leaves. Season with salt & pepper.
  4. Cut pineapple into 4 quarters lengthwise. Grill each quarter. Cut each quarter into horizontal slices while allowing it to remain slightly attached to the outside. Scoop ice cream onto the side. Heat dulce de leche in 45 second intervals stirring in between until smooth. Drizzle over pineapple & ice cream. Enjoy!
