Lemon Olive Oil Loaf Cake Recipe

  • 1⅓ cup granulated sugar
  • pinch of salt
  • 1 tbsp lemon zest
  • 1 cup EVOO
  • 2 cups AP flour
  • 1½ tsp baking powder
  • 3 eggs
  • 1 tbsp lemon juice
  • 1¼ cup yogurt, plain
  1. Preheat oven to 375F.
  2. Beat sugar, salt, eggs & zest for 3 min on medium speed with electric mixer.
  3. Add in oil & beat for another 3 min.
  4. Add in lemon juice and yogurt. Stir to combine. Add in flour and baking powder. Stir again until everything is incorporated.
  5. Pour half the batter into loaf pan that has been sprayed with baking spray. Bake for 45-55 minutes or until toothpick is inserted and comes out clean. Let cool and remove from loaf pan. Respray pan once cooled and repeat with remaining batter. Enjoy!
