Orange Rosemary Chocolate Chip Shortbread Bars

  • 2 sticks unsalted butter
  • ⅔ cup light brown sugar
  • 2 tsp pure vanilla bean extract
  • 3 tsp fresh squeezed orange juice
  • 1-2 tsp orange zest, to taste
  • 1 tsp fresh rosemary, chopped
  • pinch of salt
  • 2 cups AP flour
  • ½ cup chocolate chips
  1. Preheat oven to 350F. Line 9x9 baking dish with parchment paper.
  2. In large mixing bowl, combine the butter and sugar. Mix together using a hand or stand mixer until fully incorporated (roughly 5 min).
  3. Mix in the vanilla extract, orange juice, zest, salt, rosemary and flour until just combined.
  4. Stir in the chocolate chips.
  5. Pour the dough into your parchment lined baking dish and press down to create an even layer with a rubber spatula.
  6. Bake for 30-35 minutes and let cool 5 minutes before slicing. Serve and enjoy!
