Mix together goat cheese and herbs. Shape them into patties (four, two inch cakes). Chill for 30 minutes.
Season the bread crumbs/panko with salt and pepper to taste. Beat the egg with a pinch of salt.*
Dip the goat cheese cakes into the egg and then into the bread crumbs to coat.
Place the cakes on buttered cookie sheet and bake until golden brown (8 minutes at 375 degrees, remember to preheat) or brown them in an oiled skillet over medium/high heat.
Whisk oil with lemon juice and toss with halved tomatoes. Season with salt and pepper. Garnish with spring onion, serve, & enjoy!
* For a touch of sweetness, add a teaspoon of honey to eggs before dipping coat cheese cakes.
