Chocolate Raspberry Coconut Macaroon Recipe

Serves: 20 macaroons
  • 3 large eggs, whites only
  • 2 cups coconut
  • 2 tbsp strawberry or raspberry jam
  • ½ tbsp honey
  • optional: mini choco. chips
  1. Preheat oven to 350 F.
  2. In large mixing bowl, whip egg whites on medium-high speed until stiff peaks form (roughly 4 minutes if using mixer). Add in remaining ingredients. Stir together with baking spatula.
  3. Line baking sheet with parchment paper. Shape macaroons with your hands until roughly 1-2 in. in diameter. Place on baking sheet ½ in. from one another & bake for 14-16 minutes, until golden brown. Serve & enjoy!
