Eating Healthy On A Budget: Blueberry Loaf Cake

Ingredients
  • for cake:
  • 2 bananas
  • 2 cups whole wheat flour
  • ¾ cup honey
  • 1½ tsp baking soda
  • pinch of salt
  • ½ tsp cinnamon
  • 2 large eggs
  • ½ cup vanilla greek yogurt
  • 1 tsp vanilla extract
  • 1 cup blueberries
  • 1 cup applesauce
  • for icing:
  • 3 tbsp vanilla greek yogurt
  • 3 tbsp water
  • for topping:
  • smaller cake crumbles
  • blueberries
Instructions
  1. Preheat oven to 350 F. In large mixing bowl combine all cake ingredients. Stir to combine.
  2. Spray loaf pan with baking spray. Pour batter into pan until ¾ full. Bake for 40-45 minutes or until top of cake is firm to the touch. Let cool completely. Transfer to serving dish.
  3. In smaller mixing bowl, combine all icing ingredients. Drizzle over cake & top with cake crumbles & blueberries. Serve & enjoy!
