Cookie Layered Cake

Serves: 12 cookies
  • for cookies:
  • 2 cups all-purpose flour
  • 1½ teaspoon baking powder
  • 2 sticks salted butter, melted
  • ¾ cup sugar
  • ¾ cup firmly packed dark brown sugar
  • 1 teaspoon milk
  • 1 teaspoon vanilla
  • 2 large eggs
  • mini chocolate chips
  • pinch of salt
  • for frosting:
  • 1½ cups heavy whipping cream
  • 6 oz cream cheese, softened
  • heaping ½ cup powdered sugar
  • 1 tsp vanilla extract
  1. Preheat oven to 375 F. In large mixing bowl, combine all ingredients. Stir with whisk to incorporate.
  2. Line baking sheet with parchment paper. Scoop cookie dough onto tray at least 3 inches apart. Back for 20 minutes. Let cool completely.
  3. In large mixing bowl whip whipping cream with electric mixer until peaks form. Add in the cream cheese & mix for another 2 minutes. Add in remaining ingredients & mix until peaks form.
  4. Place one cookie on cake stand & top with desired amount of frosting. Evenly spread using offset spatula. Top with another cookie & repeat until all cookies have been used.
