Eating Healthy On A Budget: Avocado Pesto Zucchini Noodles

Ingredients
  • 1 cup basil
  • 1 cup baby arugula
  • 1 avocado
  • ½ cup pinenuts
  • 1 tsp garlic powder
  • 3 tbsp olive oil
  • 4 oz zucchini noodles
Instructions
  1. In food processor, blend basil, arugula, & avocado until smooth. Add in pinenuts & pulse 5 times.
  2. In large skillet, heat olive oil with garlic powder over medium heat. Add in zucchini noodles & pesto sauce. Let sit for 4 minutes, stir, & let sit another 4 minutes. Serve & enjoy!
