Ingredients
for the eggs:
twice cooked pork
eggs, two per person
garlic salt
olive oil
for the potatoes:
yellow onion
green/yellow/red peppers
baby red potatoes (sliced)
2 tbsp butter
2 tbsp olive oil
seasoning salt
Instructions
In large mixing bowl, beat your eggs as if you were scrambling them. Add in the twice cooked port to the egg mixture. In large skillet over low heat cook egg mixture stirring continuously until soft. Serve & enjoy!
In separate skillet add oil & butter over medium heat. Add remaining ingredients for potatoes & let sit for 15-20 minutes to get crispy. Stir every 5 minutes as to not burn them. Serve & enjoy!
