Mango Lime Coconut Rice Recipe

  • 24 oz white Jasmine rice
  • 1 can organic light coconut milk
  • 1 lime, juiced
  • 1 mango, diced
  1. Cook rice according to packaging instructions. Once fully cooked, combine in large skillet with coconut milk. Let simmer for 5 minutes or until most of the milk is absorbed. Add in the lime juice & stir to combine. Toss in the mango, serve, & enjoy!
