2 Step Blueberry Lemon Pie Recipe

Ingredients
  • for the crust:
  • 2 cups crushed graham crackers
  • 7 tbsp butter, melted
  • for the pie:
  • 28 oz sweetened condensed milk
  • 3 egg yolks
  • ⅔ cup lemon juice
  • 3 tbsp plain yogurt
  • ½ cup blueberries
Instructions
  1. Preheat oven to 350F. Spray pie dish with baking spray. Place crust ingredients in food processor until ball begins to form. Press mixture into pie dish. Bake for 8 minutes.
  2. Combine yogurt & blueberries in the food processor until smooth. Add in the milk, egg yolks, & lemon juice. Pulse for 30 seconds. Pour mixture onto pie crust. Bake for 15 minutes. Let cool to room temperature & then refrigerate for 1 hour. Serve & enjoy!
