Eating Healthy On A Budget: Teriyaki Mushrooms

These Teriyaki Mushrooms have been one of my favorite recipes to eat lately. They’re super easy, don’t require a ton of ingredients, & the big selling point here: they taste great while still being healthy! Woo hoo! All this recipe calls for are some sliced mushrooms (you can buy them whole but I prefer less work when I can get it), minced garlic (again can buy garlic & mince yourself but I prefer the jars of minced garlic), olive oil (a pantry staple), & teriyaki sauce. Typically I eat mine on their own but they’re also delicious & add tons of flavor to a chicken or pasta dish. I have yet to try them on anything else but will definitely do so in the future (thinking I might try them with salmon next!).

The key to this mushroom recipe is time. Don’t worry, making these won’t take up a ton of your time, but you will need to let them sit on the stove for a little bit (I’m only talkin’ 30 minutes people..not too bad). I cooked mine over high heat for about 2 minutes & then let them simmer on low heat for about 30 minutes. Here comes the secret to success for these mushrooms: every 10 minutes or so (roughly 3 times while you’re letting them simmer) I turned the heat to medium & stirred the mushrooms for about 3 minutes. After that I let them continue simmering over low heat & repeated that two more times. This allows the mushrooms to truly absorb all the garlic, oil, & teriyaki flavors while softening them simultaneously. Eating Healthy On A Budget: Teriyaki Mushrooms

Ingredients

  • 1 package 8 oz. sliced Crimini mushrooms (I used these from Trader Joe's)
  • 3 tbsp EVOO
  • 3 tbsp teriyaki Sauce (I used this)
  • 2 tsp minced garlic

Instructions

  • Wash mushrooms & dry completely.
  • In medium skillet heat olive oil & garlic over high heat. Add in mushrooms & stir to cover mushrooms in oil & garlic. Let cook for 2 minutes, stirring continually. Add in teriyaki sauce & reduce heat to a simmer. Stir to coat mushrooms in teriyaki.
  • Let mushrooms simmer for 10 minutes. After 10 minutes, turn heat to medium & stir for 3 minutes. Return heat to simmer & repeat 2 more times.
  • Serve & enjoy!
