Amanda Kloots' Healthy Pizza Recipe

- cauliflower curst
- ¼ cup basil pesto
- 1 tsp extra-virgin olive oil (EVOO)
- 1 jar sun-dried tomatoes
- ½ cup spinach
- ⅓ cup mozzarella cheese
Cook cauliflower crust according to instructions on package or recipe.
In small skillet, combine EVOO & spinach. Sauté over medium heat until spinach has wilted (roughly 3 minutes).
Spread basil pesto over the pizza similar to how you would with pizza sauce. Top with spinach, sun-dried tomatoes, & cheese. Bake or broil for 2 minutes, until toppings have melted into the pizza. Serve & enjoy!
