Chocolate Brownies with Raspberry Cheesecake

Ingredients

  • for brownies:
  • 1 stick butter, melted
  • 1 cup granulated sugar
  • heaping ⅔ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • 2 large eggs
  • heaping ½ cup all purpose flour
  • pinch of baking powder
  • or topping:
  • 4 oz goat cheese
  • 2 oz Neufchatel cheese (can substitute with cream cheese)
  • 1 tbsp unsalted butter
  • 6 oz raspberries

Instructions

  • Preheat oven to 350 F. Spray baking pan with baking spray.
  • In large mixing bowl, combine all brownie ingredients. Pour mixture into baking pan. Place brownies in oven for 10 minutes.
  • In separate medium bowl, melt cream cheese, goat cheese, & butter for 30 seconds. Stir & add in raspberries. Gently crush raspberries with whisk. Pour mixture over partially baked brownies. Optional: Swirl top of the mixture with toothpick to achieve design. Place in oven for 20 additional minutes. Let cool, serve, & enjoy!
