Chocolate Brownies with Raspberry Cheesecake

- for brownies:
- 1 stick butter, melted
- 1 cup granulated sugar
- heaping ⅔ cup unsweetened cocoa powder
- 1 tsp vanilla extract
- 2 large eggs
- heaping ½ cup all purpose flour
- pinch of baking powder
- or topping:
- 4 oz goat cheese
- 2 oz Neufchatel cheese (can substitute with cream cheese)
- 1 tbsp unsalted butter
- 6 oz raspberries
Preheat oven to 350 F. Spray baking pan with baking spray.
In large mixing bowl, combine all brownie ingredients. Pour mixture into baking pan. Place brownies in oven for 10 minutes.
In separate medium bowl, melt cream cheese, goat cheese, & butter for 30 seconds. Stir & add in raspberries. Gently crush raspberries with whisk. Pour mixture over partially baked brownies. Optional: Swirl top of the mixture with toothpick to achieve design. Place in oven for 20 additional minutes. Let cool, serve, & enjoy!
