Ingredients

  • 4 cups cherry or grape tomatoes
  • 1 cup fresh goat cheese
  • 1 teaspoon chives, chopped
  • 1 teaspoon basil, chopped
  • 1 teaspoon oregano, chopped
  • 1 teaspoon thyme, chopped
  • 1 cup unseasoned bread crumbs or panko
  • ground black pepper
  • salt
  • 1 egg
  • olive oil
  • 1 tablespoon fresh lemon juice
  • honey, optional
  • spring onion garnish

Instructions

  • Mix together goat cheese and herbs. Shape them into patties (four, two inch cakes). Chill for 30 minutes.
  • Season the bread crumbs/panko with salt and pepper to taste. Beat the egg with a pinch of salt.*
  • Dip the goat cheese cakes into the egg and then into the bread crumbs to coat.
  • Place the cakes on buttered cookie sheet and bake until golden brown (8 minutes at 375 degrees, remember to preheat) or brown them in an oiled skillet over medium/high heat.
  • Whisk oil with lemon juice and toss with halved tomatoes. Season with salt and pepper. Garnish with spring onion, serve, & enjoy!
  • * For a touch of sweetness, add a teaspoon of honey to eggs before dipping coat cheese cakes.
