Simple Mediterranean Pasta Recipe

- 1 lb bucatini (this is my favorite as it tastes super fresh)
- 1 7oz. jar sun-dried tomatoes (these are my favorite as the ingredients are super clean yet flavorful)
- ½ cup chopped spinach
- ¼ cup feta cheese
- ¼ cup pinenuts
In medium skillet, heat 1 tbsp of the olive oil from the jar of sun-dried tomatoes over medium heat. Add pine nuts and toast 2-3 minutes on each side until they smell nutty and are golden brown. Remove from heat and set aside.
Cook pasta according to the packages instructions. While pasta is cooking, combine sun-dried tomatoes and spinach in food processor and chop until pesto consistency has formed.
Strain pasta and toss with sun-dried tomato mixture. Top with feta cheese and toasted pine nuts. Enjoy!
